Evelyn's Kitchen: HERB CHICKEN ON WILTED DANDELION BED

There are two simple dishes involved in this recipe, as the heading implies. Having served the above to my family on several occasions, I thought it would be a good idea to share these healthy and healing dishes with all of you. My herb chicken on wilted dandelion is guaranteed to satisfy your palates. Although one has to get used to the subtle bitterness of dandelion, it is a good complement to the herb chicken nonetheless. Dandelion is a natural diuretic. It has pectin that relieves constipation and reduces cholesterol. It also contains inulin, known to have a positive effect on blood sugar levels. And among many other health benefits, dandelion has this chemical component called taraxacin, which is thought to stimulate the digestive organs and help promote the liver and gallbladder to release bile.

Evelyn's Kitchen: TAMALES

Numerous fans have requested this recipe and I am glad to present this simplified version. Simple as it may be, it is healthy and the quality and taste have not been compromised. I have to draw from my mother’s cooking during my early years in my hometown of Rosario, Cavite, Philippines to come up with my version of tamales. Although there are countless versions of this popular dish made of corn meal dough called masa, I have opted to break away from tradition and used regular flour. Making this recipe is an adventure in itself and the results are surprisingly delicious. Tamales can be served as part of the main meal or as an appetizer if sliced in small serving pieces.

Evelyn's Kitchen: Food for the Gods

One of our regular customers, Linda Roll, has been giving us this delicacy as a gift on several special occasions. Linda was gracious enough to lend me her recipe, which I re-engineered (mea culpa) to keep my husband’s sweet tooth in check. I used 1/2 cup sugar instead of the original 1 1/4 cup and substituted buttery spread for regular butter, which is natural and non-hydrogenated and can help improve cholesterol ratio.

Evelyn's Kitchen: SHRIMPS WITH SAVORY COUSCOUS

This kitchen-tested dinner for 3 is fast and easy to make. I have cooked this for my family on several occasions and everyone always enjoyed it. I use the colossal shrimps but you can also substitute the jumbo size – just add more shrimps. This recipe is not only filling, but also wholesome. It is considered one of the healthier foods around. I serve couscous as a substitute for rice. Couscous is a food from Western Mediterranean, although it is also eaten in many other parts of the world. It is available from any grocery store.

Evelyn's Kitchen: FILLET MIGNON WITH DUXELLES AND SPINACH

This recipe can satisfy your cravings for the perfect steak. This will not harm your lean diet, especially if not eaten on a regular basis.

Ingredients:
4 pieces fillet mignon (approximately palm size)
8 large button mushrooms, finely chopped
1/2 cup finely chopped onions
2 tablespoons light buttery spread (brand name: Smart Balance)
2 cups or 2 handfuls of baby spinach, washed and drained
pepper, freshly ground
4 thin slices of smoked gouda cheese salt
2 tablespoons white wine
2 tablespoons soy sauce
1 tablespoon corn starch diluted in 2 tablespoons of water

The method I am giving you here is the simplest I can make it. Going at it step by step, and several tries later, will give you confidence in no time at all. The batter ingredients are inexpensive, and nothing compares to the satisfaction and pride in making the perfect crepe. A whole new “crepe-ing” experience will open up a world of endless recipes like appetizers, first course meals, main entrees, desserts, and so on.

When I was taking my French Master Chef course, making smoked salmon was one of my favorite subjects. Afterwards, I had made smoked salmon on countless occasions when I was still in London. I ended up being an expert on this particular recipe. It was so good to eat it for dinner, especially with salad and French bread. When a few classmates and a couple of local friends came to visit, I always served them my smoked salmon as their appetizer. They always came back for more.

(Mini Stuffed Beef). I served this dish (among several) at a recent home gathering. Making this special recipe is easy once you have gathered and prepared all the necessary ingredients. The end result is a satisfying and rewarding feeling of having cooked a delicious and elegant dish. The morconitto slices can be served in a long platter, topped with some of its own sauce. (As an option, you may serve the remaining sauce in a separate bowl.) Garnish with chopped parsley and sprigs of the same.

Evelyn's Kitchen: MUSTARD GREEN STEMS WITH DRIED SHITAKE MUSHROOMS

Last Saturday, we had a gathering at home with friends and members of the Ambassadors of Mary. Because it was Holy Saturday, I had on the menu meatless dishes, such as, bean thread with calamari, herb crust jumbo shrimps, stuffed milkfish, ratatouille, naked fresh lumpia, and last but not least, mustard green stems with dried shitake mushrooms. The latter conquered everybody's taste buds, if not their hearts. This dish is not only very enticing, but also simply delicious.

Some of my fans wanted me to publish a tart recipe, so I felt obliged with this simple appetizer, as a start. This small tartlets, filled with mushrooms, are ideal to serve warm with any kind of drinks. As an alternative, they could be made larger tarts and served as a first course. In this recipe, you first have to make the shortcrust pastry. I know it is better to see how it is actually done, but after a couple of tries with my easy to follow methods, you will find that it is really easy to make. Once you master making the pastry, the possibilities of creating any kind of pastries/tarts or quiche are endless.

Evelyn's Kitchen: HUNGARIAN EGG NOODLES WITH SHRIMPS

Although this type of egg noodles and our very own pancit canton are both made of eggs and wheat flour, they are totally different in texture, shape and taste. Hungarian egg noodles is a specialty product made of selected fresh eggs and Hungarian wheat flour.

It is a very appropriate dish to serve for the Lenten season. The combination of egg noodles, shrimps and snap peas makes this kitchen-tested dish attractive, very delicious and wholesome for the entire family, as well as guests.
